Amish Meat Loaf

Amish Meat Loaf
Serves 8
Points value per serving: 6

If you prepare this in a bread pan (silicone is best!!) and make 8 slices, each slice will be 6 pts. I've tried to reduce the higher fat ingredients, but it didn't help the points any.

Ingredients
2 pound uncooked lean ground beef (with 7% fat)
3/4 cup uncooked oatmeal
2 large egg(s)
1 cup 2% reduced fat milk
1/4 cup onion(s)
Salt & Pepper to taste

Sauce:

1 Tbsp Worcestershire sauce
1/2 cup unpacked brown sugar
1 1/2 tsp mustard
1/4 cup ketchup

Instructions:

Beat eggs; add milk, oatmeal, and onions. Let stand 5 minutes. Put in hamburger, salt and pepper; mix well. Bake 350* for 45 minutes. Cover with sauce and bake additional 15 minutes.

*My suggestion* Double or Triple your sauce recipe so that you have leftovers. Warm the leftover sauce in the microwave and then drizzle over each slice as it is served. YUM!!

The next day, if you have leftover meatloaf, make a grilled meatloaf sandwich. There are many ways you can make this lower in fat, too. You can spray the pan with Pam olive oil spray, spread with light butter, spray with butter alternative...whatever. Grill it like you would a grilled cheese sandwich (use low-fat cheese), but add thin cut slices of the meatloaf to the sandwich before grilling. When it's done grilling, add some sliced tomatoes and a piece of lettuce. You can put some light mayo on it, but really you don't need it. Serve with raw veggies and/or Baked Lays.

I made this for my hubby this afternoon and he was a happy man!! :)

SCRUMPTIOUS!!!

For the record, the meat loaf was good, but that is not the only reason I was a happy man....
